#EatThis:LoseWeight – Israeli Cous Cous Side Salad

If you are looking for a healthy side that is going to produce a lot of lip-smackin’ yums, then try this Israeli Cous Cous Salad!

Ingredients:

1 cup of Israeli cous cous

2 cups chicken (low -fat) or vegetable broth

3 tablespoons cilantro, chopped

1 tablespoon olive oil

1/2 cup of pine nuts

2 cups of dried cranberries

1 small red onion, finely chopped

1/4 cup green onions, chopped

zest and juice from 1/2 lemon

 

Instructions: In medium sauce pan, on medium to high heat, saute Israeli cous cous in oil until golden brown. Pour in broth.

Cover and let simmer for about 20 minutes until al dente (to taste) (if there is left over water; drain – and if it is sticking together, break it up and add another drizzle of oil)

Combine rest of ingredients in another bowl.

Then mix together and serve.
