Eat This: Lose Weight – Cantaloupe and Tomato Salad

This morning, this Dysfunctional Chef (that’s me), was sort of in the mood to cook, but sort of not in the mood, which ultimately led me to this very fabulous, easy to make, simply delish recipe that I am sure (as sure as I can be) that you will like, too!

Guiltless, Guilt Free, Happy Filled–Cantaloupe and Tomato Salad

Ingredients:

1/2 Cantaloupe diced into 1 inch cubes (or if you are a fancy-type person, get your baller out and go to town!)
1 lb. juicy, ripe, fresh tomatoes diced into one inch cubes (get your ruler out!)
1 cup chopped fresh basil (Whoa, is that too much? No! Who couldn’t eat truck loads of fresh basil???)
Olive Oil
Balsamic Vinegar
Salt n’ Pepper to taste

Instructions:

In a large bowl, mix together the cantaloupe, tomatoes and basil.
Season with salt n’ pepper to taste.
Drizzle (and I mean drizzle; no pouring allowed) high quality olive oil
Drizzle with high end balsamic vinegar
