Egg - Another Urban Health Myth Dispelled
Contrary to the urban health myth of needing to restrict your egg intake to two a week, a study by the Harvard School of Public Health found that there is no significant link between eating eggs and developing cardiovascular disease in healthy individuals. The 'devil' is in those saturated fats and trans fats found in pastries, snack and processed foods - or any foods containing hydrogenated oils that raise blood cholesterol levels!
Egg protein is second only to mother's milk as the ideal for human nutrition. Eggs contain all nine essential amino acids, making them the most perfect natural protein food for human nutrition, and they are the standard by which all other proteins are measured.
Eggs are also a good source for B-12, vitamin E, riboflavin, folic acid, calcium, zinc, iron, fluorine, magnesium, manganese, phosphorus, sodium, and sulfur as well as essential fatty acids. And they are only 75 calories!
Many nutritionists say that making one egg three times per week a part of your food plan is a good thing.
Do pastured hens produce more nutritious eggs?
Experiments have shown that range-roaming, grass-eating, antibiotic and steroid free hens produce more nutritious eggs than cage-raised hens. Eggs from pastured, grass-fed hens contain up to 20 times more healthy omega-3 fatty acids than their long-lost space-restricted and antibiotic-pumped sisters, the 'factory hens.' The high level of omega-3 leads to a 20 percent increase in serotonin and dopamine levels in us. These are the chemicals in our brain that regulate mood and emotion. Happy! Happy!
And free-range eggs have 10 percent less fat, 40 percent more vitamin A, and 34 percent less cholesterol.
Eggs are a bird's way of reproducing. It makes sense that the egg must contain all the nutritional factors necessary for the chick to be healthy. This is why the egg is so rich in nutrients and highly desired by other creatures as a food.

Righteous Recipe ~ HOLIDAY BOOSTERS! Mock-EggNog-Lite
INGREDIENTS:
1 (1 ounce) package sugar-free instant vanilla pudding mix
5 cups nonfat milk
1/4 teaspoon ground cinnamon
1 pinch ground nutmeg
1 teaspoon rum flavored extract
DIRECTIONS:
In a large mixing bowl, mix together sugar free vanilla pudding mix, nonfat milk, ground cinnamon, dash of nutmeg , and rum extract. Mix these very well with a wire whisk for at least 2 minutes. If this is too thick, add more milk and a little sweetener - if you like.

Caution: Not for Consumption! - Egg White Mask
INGREDIENTS: 1 egg
DIRECTIONS: Break open the egg and separate the white from the yolk. Beat the white for one minute by hand. Gently apply to the skin and let it harden. Wash off with warm water. The egg white draws toxins from the skin’s surface and tightens the pores as it cleans.

Dear OLofWL: Boy, did I get myself into trouble. I started baking holiday cookies for the kids - of course - not for me! I really love the batter, more than the actual cookie, and it seems that more of the batter went into me than onto the tray. I realized that when I cook, especially bake, I taste and taste and taste my way through it. Any suggestions on how to bake without doing this? ~ Dough Girl Kate, MS
