Like the heart, stomach, and brain, your skin is an organ. In fact, it's the largest organ in your body and it grows from the inside out. There are many nutrients, including protein, vitamins, minerals, healthy fats and water that are needed to condition, repair and regenerate your skin.
Water, sometimes called the forgotten nutrient, rids your body of toxins and keeps skin moist. Be sure to drink approximately half your body weight in ounces per day.
For healthy and beautiful skin, here’s the A, B, C skinny on the subject:
Vitamin A helps to even out skin tone, diminish fine lines and may help to make skin more elastic.
Good sources are: egg yolks, milk and dairy products, fish oil.
Vitamin B controls oil secretion, decreases propensity towards blemishes, and helps to prevent scaly skin. Sources: Poultry, fish, whole grains, dried beans, bananas, meat, leafy green veggies as well as dairy products.
Vitamin C helps heal scar tissue, cuts and bruises and protects against UVA rays. Sources: Citrus fruits, broccoli, cabbage, tomatoes, berries, melon, peppers, potatoes.
Vitamin D helps to moisturize and condition skin. Sources: Egg yolks, salmon, herring and fortified milk.
Vitamin E conditions and moisturizes skin, helps heal burns, inflammation, cuts, and irritation and may minimize formation of scars. Sources: wheat germ, nuts, vegetable oil, green leafy vegetables, whole grains.
Essential fatty acids moisturize the skin while helping to maintain its barrier function. Sources: flaxseed oil, evening primrose oil, blackcurrants, safflower oil, borage seed oil, linolenic acid.
Vitamin K reduces bruising, may help relieve dark circles under eyes, treats actinic purpura in aged skin, and may help fade broken capillaries. Sources: green leafy vegetables.

Three cheers and one question for Kathryn! Can this be frozen? I'd love to make a bunch of stuff way in advance of Thanksgiving weekend. Any suggestions, Kathryn? Anyone else?
• 1 large onion, coarsely chopped
• 1 tube turkey sausage (this soup is great meatless, too, so leave this out if meat offends you)
• Enough olive oil to brown the above
• Several mushrooms, sliced (whatever variety rings your chimes. I'm heavy into how fabulous mushrooms are for your immune system now, so I favor shiitake & maitake, although I've been known to use a portobello or two before. Reishi is the best, medicinally, but it will make your mouth curl up because it's so bitter ...)
• 2 medium sized acorn squash, or 1 large-ish butternut, or a smallish pumpkin, or any combination thereof, baked or steamed so the flesh is soft.
• 1 cup or so plain non-fat yogurt, low-fat yogurt or low-fat sour cream, or whatever combo you choose
• Garlic, finely minced, in whatever quantity works for you — I use 3 or 4 cloves, but then I’m a garlic radical.
• 1 large can chicken or vegetable broth
• Water to adjust consistency
• Nutmeg and whatever other spices make you happy in the moment. I sometimes add cinnamon or cloves and some fines herbes.
Brown the onion in oil, add mushrooms and saute to suit you — I like mine a little crispy. Scoop the onion and mushrooms out of the oil and brown the sausage. While the sausage is browning, puree the squash in the blender or food processor. Add a little of the broth if the consistency is too thick. (And of course, you’ve saved the pumpkin or squash seeds and will be toasting them in the oven with a little olive oil and seasoned salt, but that’s another recipe ... )
When the sausage is brown, add the mushrooms and onions back in, stir in the squash puree, yogurt, garlic, spices and broth. Heat until it begins to bubble, stirring constantly so it doesn’t stick. Serve in soup bowls and garnish with a swirl of yogurt or sour cream and a sprinkle of nutmeg.

Dear OLofWL, I got my "Kick" this a.m. and truly appreciate it. Ma's sick and far away and food is a bad comfort alternative. I'm going to my Weight Watchers meeting tonight (I skipped last week) but need all of the additional help I can get. Dear Moola, It's really difficult for us emotional eaters when stressful situations surface. I think it's great that you made your Weight Watchers meeting a priority.
