“GOT Calcium?” -or-
Lactiferous Wonders - More on the dietary guidelines.
The Dietary Guidelines Advisory Committee* recommends that adults increase their milk product consumption by 33%, from two servings to three servings per day.
Their report concluded that “three servings (equivalent to three cups) of milk and milk products each day can reduce the risk of low bone mass and contribute important amounts of many nutrients."
The report continues, “Increased dairy consumption may have additional benefits, and is not associated with increased body weight."
The $50 billion U.S. dairy industry has got to be happy with this recommendation. Despite the “Got Milk” ad campaign, per-capita fluid milk sales have fallen approximately 3% over the last five years. The 3-cup per day recommendation could boost industry profits, particularly in light of the fact that school lunch menus adjust to the USDA Guidelines.
What is a dairy product?
This food group includes milk, cheese and yogurt - but not butter, margarine or cream. They belong in the fat category. The foods in the dairy group are particularly rich in calcium.
What is the importance of calcium?
Calcium, a mineral, strengthens your bones and teeth. It's especially important for growth. Calcium can continue to add to the strength of your bones until peak bone mass is reached, at the age of 30-35. What happens then? Your bones lose density and weaken. It is a natural part of the aging process. If you haven't had enough calcium in your diet, there's an increased risk that your bones won't be strong enough to deal with this weakened state. This can cause brittle bones, also known as osteoporosis.
A Word to the Wise.
Before reaching for the ice cream, or even whole milk, consider low-fat milk and yogurt. One cup of whole milk
has more than 8 grams of fat, compared to a cup of 1% low-fat milk, which has 3 grams of fat. If you substitute skim milk, you’re down to 0.5 gram per serving!
* The Dietary Guideline Advisory Committee reports to the U.S. Departments of Health and Human Services (HHS) and U.S. Department of Agriculture (USDA). These agencies then translate the findings into the 2005 dietary guidelines, also known as the "Food Pyramid."

Righteous Recipe ~ Jalapeno Heaven
12 jalapeno peppers
3
ounces light cream cheese, room temperature
1/2
cup low-fat cheddar cheese, shredded
1/4
cup green onions, finely chopped
1. Cut jalapenos lengthwise.
2. Rinse out the seeds. Remove the stems and veins.
3. In a small mixing bowl, mix cheeses and onions.
4. Stuff each jalapeno half with cheese mixture.
5. Bake the peppers in a 350 degree oven for about 15 minutes, or until the cheese melts.
12 servings; approx. 32 calories each; 2.2 grams fat; 1.3 grams carbohydrate

Dear OLofWL,
A friend told me to take a look at your website a few months back, but I thought that it wasn't for me. I mean, so what if I needed to lose 25 pounds - I would get around to it in my own time. Well, I finally checked it out, and I found the site really interesting. So I kept checking in and I was inspired. I've lost 5 pounds. Sometimes it feels like I will never get there, the weight loss I mean, but I know that I am developing a whole new way of looking at food and nutrition, so I have to believe it will happen.
