It's time to KICK off the barbecue season.

Memorial Day is right around the corner. Clean up and heat up the grill, gather your friends and get smokin'. While cooking with fire - an ancient cooking technique - is adventurous and fun, there are a few things to consider.

Grilling Tips:

  • For delicious, juicy results, remove meat and poultry from the fridge an hour before cooking (keep out of direct sunlight).
  • When making kebabs, thread the food loosely to allow the pieces to thoroughly cook.
  • To avoid excess smoke, trim off excess fat and drain food that has been marinating.
  • Before putting your meats, chickens and vegetables on the BBQ, make sure that the coals are very hot. They should have a light coating of gray ash. Plan ahead, as this can take 30 minutes or longer.
  • If you have a lid, close it! When open, heat escapes and you won't be able to properly roast or sear your meats.
  • Be sure to thoroughly cook your meat and poultry. Use a meat thermometer to ensure doneness. Large cuts of beef should be cooked to an internal temperature of at least 160 degrees F, whole poultry to 180 degrees F.
  • Eat perishable foods within two hours, or - if it's a hot and steamy summer day and over 90 degrees F - eat within one hour.
  • A clean grill is a must. Burn off at full temperature for 10 minutes then scrape away the charred remains with a wire brush. Allow to cool and wipe grill with a touch of vegetable oil.
  • And last but not least, a few safety thoughts: Remember to wear a heavy apron and an oven mitt that fits over your forearm. Keep grill away from house, garage, landscaping and kids! It keep it on level ground. And never use gasoline to start your fire. Be sure to soak the coals in water before you throw them out.

BBQ Fun Facts:

According to the Hearth, Patio and Barbecue Association, 76 percent of American households own a grill; 48 percent own a charcoal grill; and 61 percent own LP gas grills. Yes, it that does add up to more than 100 percent. Some of us have more than one grill!

Men use gas and charcoal barbecues twice as much as women, but if it's an electric barbecue, woman are more likely to do the cooking.

Breezy, easy and light ... Our Lady's favorite grill recipes, includes: grilled asparagus; potatoes and onions; pineapple chicken kabobs. Care for some BBQ'd French Onions?
How about some Grilled Portobello Mushrooms. (Note: I'd cut the butter and oil in 1/2, at least.)

Dear OLofWL, Your Art Kick (Incredible Edible Flowers-#20) made me laugh.... Many moons ago, several friends and I went out to dinner at a new restaurant and when my meal was served there were flower petals on the plate. I remember thinking, "How nouveau, quel chic!" So I ate them all up! When we got up to leave, I noticed a large arrangement that had been directly behind me (how had I missed that HUGE thing?) with the EXACT same petals that had been on my plate!! I imagine when my plate was being served the floral arrangement was jostled just enough to add some decor to my plate. Well, I lived to tell the tell so apparently they weren't poisonous. Just a word to the wise, check out the foliage around you before you sit down in case you see it again!! ~ Laura in Dallas, TX!
