You Say Tomayto, I Say Tomahto

When you hear phytonutrient research, lycopene studies, anti-oxidant rich, cancer-preventing properties, and folate levels, what fruit (yes, fruit!) jumps to mind faster than the luscious, sweet and tender tomato?

Whether red, yellow, orange, green or brown, tomatoes have been shown to be helpful in reducing the risk of colorectal, prostate, lung, stomach and pancreatic cancer.  Tomatoes are good for the heart, reduce risk of stroke, fight against diabetes, and help to lessen the frequency of migraine headaches.  The American Cancer Society estimates that diet is a primary factor in one-third of cancer deaths. 

A Tuft’s University study shows that daily consumption of gazpacho significantly increases blood levels of vitamin C and decreases biomarkers of oxidative (free radical) stress and inflammation.  In other words, if you're feeling stressed have a cup of Gazpacho. A cup a day keeps the oxidative stress away. And those free radicals, too!

What is Gazpacho?
Gazpacho is a cold Mediterranean vegetable soup whose ingredients are typically tomatoes, cucumbers, sweet peppers, onions, garlic, along with olive oil.  Delicious, refreshing and loaded with enough nutrients, antioxidants, folic acid and fiber to reduce risk of a multitude of chronic diseases.

Do you know what the researchers’ final conclusion was?  Increasing vegetable consumption could improve human health.  Well – like hello - I could have told them that!

Tips for Preparing Tomatoes ~ Before serving, wash tomatoes under cool running water and pat dry.

If you want to use ‘seeded tomatoes,’ cut the fruit in half horizontally and gently squeeze out the seeds and the juice.

Caution:  When cooking tomatoes, do NOT use aluminum cookware. The high acid content interacts with the metal that possibly results in aluminum migrating from the pan to the food!   It tastes bad and even worse, may be harmful as in toxic to your health.

Righteous Recipe ~ Gazpacho (Cold Soup)

Ingredients:

2 cups cucumber, peeled and diced
3 cups fresh tomatoes, red ripe, diced
1 cup green bell pepper, cored, seeded and chopped
1 cup red bell pepper, cored, seeded and shopped
2 cups red onion, cut into chunks
2 cloves garlic, chopped
2 cups tomato juice (organic, if you are so inclined)
1/4 cup red-wine vinegar
pinch cayenne
1 cup chopped, fresh cilantro
salt and pepper to taste

 

Directions:

Put everything in a blender, and puree. Refrigerate, the longer the better.  The flavor settles in.  One hour is okay; but overnight is even better!

Dear OLofWL,  When my son got married, a few years ago, I lost 30 pounds for the occasion. Unfortunately, I gained it back.  I cannot seem to get myself into the "state of mind" that ignites a change of lifestyle. My cousin, who is more like a sister to me, lost a lot of weight and kept it off.  She’s never once ‘tsk tsk’d’ me or made me feel like a failure.   I very much appreciate her not saying anything that would make me feel bad about myself.  And I kind of don’t want to open up that can of worms, but maybe, since she’s been successful, I should ask her what her secret to success is.   What do you think?  Your avid fan... Dear Nadeva,  First things first, you're not a failure. Most people take more than one go around to keep it off. Was this the first go-around for your cousin/sister? I'd bet not. And, most people who lose weight solely for an occasion gain it back.  Once the occasion has passed, where’s the motivation?  When people want to permanently remove excess weight they need to do it for themselves – not for anyone else; not for an occasion.   You should definitely talk to your cousin/sister. I went to dinner with friends last night. I ordered steamed vegetables, brown rice and drank tons of water. They were amazed at my willpower - my strength - my dedication to self. When I got home, I sat at my kitchen table, in the dark and downed a mud pie.
