Mango Mango

Did you know that mangoes are a comfort food?  Well, they are! 

Mangoes are rich in vitamins, minerals, antioxidants, are loaded with fiber,and have an amazing enzyme that helps to calm and sooth thy stomach and thy soul!

Mangoes have been around for at least 4,000 years.  They grow on huge trees and the mango fruit gracefully hangs down like an upside-down lollipop on a very long stem.

Mangoes originated in Southeast Asia and were known as the “King of the Fruits.” Asia produces three-quarters of the world's mangoes. But most of the mangoes eaten in the U.S. are from Florida, Mexico, Haiti or other parts of the Caribbean.

Mangoes are available from January through September, however, those that enter the marketplace later are generally of better quality.  Mexican mangoes are available from April through September; and Florida mangoes from May through August, although they peak in June and July. 

One cup of mango slices is approximately 110 calories with 0.5 grams of fat and 3 grams of dietary fiber. So next time you're a bit frazzled, and in need of a little comfort, solace, smoothing over – reach for a mango! 

How to Pick a Mango: Pick up a mango and very softly press your thumb against its flesh. Does it give a bit and smell really sweet, like a flower? Great! If there are a few black spots on it, not to worry, as mangoes bruise so easily. But if covered with bruises, it is past its prime! The best sized mango is about a pound or so. And for the most part, if a mango smells great, it tastes great.

If the mango is green and firm, you can bring it home and ripen it yourself! Leave the mango on the counter for a few days, until it colors (yellow/orange to red), is soft to the thumb, and smells good. Do not refrigerate a mango. If you store a mango below 50ºF for any length of time it will lose its flavor.

How to Cut a Mango: It's important to use a sharp thin-bladed knife. First, cut off both ends of the fruit. Then place fruit on the counter, flat end down, and using knife, peel the skin off from top to bottom along curvature of the fruit. Then cut fruit into slices by carving lengthwise along the pit. The pit is huge!

More fresh mangoes are eaten world-wide than any other fruit.

Buddha was presented with a grove of mango trees in which to rest. It is believed that mango trees grants wishes. And they are a symbol of love.

Indian villagers believe that when a son is born, mango trees grow new leaves. So they use leaves to decorate their doorways and announce the happy event to the world.

Mango leaves are also used at wedding ceremonies to ensure that the newlyweds will bear children.

On holy days, Hindus use mango twigs to brush their teeth.

Righteous Recipe ~ Mango Soup

Mango Soup
Ingredients:
1 large mango, peeled and diced
1 tablespoon fresh lemon grass, chopped
1 large pinch cayenne
1/2-inch piece fresh ginger
1-3/4 cups chicken stock
3/4 cup plain yogurt
2 tablespoon cilantro, chopped

Instructions:
Place the mango in a food processor or blender and pulse a few times. Add: lemongrass, ginger, cayenne, and 1/2 cup of the chicken broth. Process until completely smooth. Transfer to a large bowl, and add the rest of the chicken broth. Stir well. Add the yogurt and stir again. Chill, and garnish with cilantro before serving.

Makes six servings. Approximately 50 calories per serving!

Dear OLofWL, It seems that this year's birthday is never-ending. I was honored at a birthday dinner with a friend and her mother on Friday evening, and on Saturday I was treated to a birthday buffet with my husband and his mother. I had a one-day reprieve on Sunday, but on Monday, I was taken out for a birthday luncheon and Monday night my husband took me to a birthday dinner. Tuesday morning, I was taken to a birthday breakfast buffet - AND - I have one more birthday invitation and then I hope my life returns to normal!! FYI - I began at 243 pounds and I am down to 182, and I hope to lose an additional 35 pounds. I think the column that you write and share with the world each Monday is the most unusual, inspiring and inventive and magnificent creation on any planet. I thoroughly enjoy it and "eat-up" every word. Your artwork is way beyond wonderful. Thank you for all of you humor and encouragement and recipes to one and all. I hope you never go away. Happy Birthday Pamela, Congratulations on your 61 lb. weight loss. (Did I do the math right?) That's amazing and you sure don't want to lose steam. Get back on track and keep going. If you could lose 61lbs., you can drop another 35.

Your letter got me to thinking about birthdays and celebrations, in general. Why can't we find ways to be together - to celebrate - to share - other than over food? Why not a Birthday Bowling Bash? Miniature Golf Festival? Pottery Extravaganza (you know, those places where we can paint something and take it home)? It's truly wonderful that so many people want to celebrate you. You are loved! But I'm also wondering with your weight loss history, why was everyone feeding you? And from the sound of it, they were feeding you food that you didn't want to eat. Let's get creative here. Going forward, perhaps we could limit the number of celebrations, be the person to pick the restaurant, and find something else to do together! What do you think?

Dear OLofWL, May I please receive your newsletter? I am the fattest woman in my town. I know I have to diet and exercise but it seems futile at times. I start, I stop, I exercise then I don't exercise. I am not hugely obese, but I live in rural Japan and ALL of my friends wear ones or twos. All of the women I attend school with are Asian and my big American butt stands out like a beacon. My language class partner is from Vietnam, she must weigh 40 kilos, 88 pounds, I feel like an oaf sitting next to her. We had to list our goals for the New Year on the first day of class after O-shogatsu and I wrote down lose 8 kilos. I have lost 2 kilos. I need to lose the rest by the end of December.  I know what to do, it is just doing it. Kind of amazing but all the words concerning weight loss, "get weight" "the scale goes up/down", "on a diet" and can read the kanji for fat, carbs and calories. I just need a gentle push into losing weight. How can I talk about how frustrating it is to be big to my best friend when she wears a "S"? Thank goodness my husband loves me and tells me not to fret. ~ Linda
