Three Pounds of Flax

Flaxseed and flaxseed oil are heart-healthy and loaded with cancer-fighting antioxidants.  Flaxseed is an outstanding source of Lignans, Fiber and Omega-3 fats.

Lignans are plant compounds found in the hull of the seed.  Their properties are similar to a low form of estrogen (phytoestrogen) and may help to prevent hormonal cancers, including breast cancer. It is also known to help prevent prostate cancer. Lignans are good sources of antioxidants, have antibacterial and antiviral properties and help prevent free-radical damage associated with aging and disease.

Lignans also significantly lower LDL cholesterol (the ‘bad’ cholesterol) and raise HDL cholesterol (the ‘good’ cholesterol).

Fiber keeps the digestive tract clean and regular and helps to keep cholesterol and triglycerides levels low, which in turn, helps to prevent heart disease.

Omega-3 fatty acid is known as one of the 'good' fats. A lack of omega-3 fats in our diets, which is all too common, can result in fatigue, dry skin, cracked nails, thin and breakable hair, constipation, immune system malfunction, aching joints, depression, arthritis and hormonal imbalances.

Flaxseed has been a staple of our diets for thousands of years.  Its botanical name, Linum usitatissimum, means 'most useful plant.’  Indeed! Its blue-flowering plant also serves as a source of clothing and flax seed oil has been used as lamp oil.

Hippocrates was a major fan of flaxseed.  He believed in its curative powers, particularly for abdominal ailments.

How to Add Flaxseed to Your Daily Food Plan:
Toss in a tablespoon of flax seed into your breakfast smooth.
Sprinkle it on your cereal.
Stir it into your yogurt.
Add to your muffin, pancake, cookie batter … any baked goods recipes.
You can even coat fish or chicken with it and oven fry! Home made nuggets.
Yum!

(Note: Flaxseed oil is a great source of omega-3 fatty acids, but it does not contain the lignans and dietary fiber that the whole form of flaxseed does.)

Righteous Recipe ~ AppleFlax Jacks

Ingredients:

   1-1/4 cups all-purpose flour
   1/3 cup flax seed, coarsely ground
   3 tablespoons granulated sugar
   1 tablespoon baking powder
   1/2 teaspoon salt
   1/4 teaspoon cinnamon
   Dash of nutmeg
   2 eggs, separated, whites beaten
   1 1/4 cups 2-percent milk
   3 tablespoons butter, melted
   1 cup pared and shredded apple
(shred just prior to adding butter)

  

       

Instructions:

In a large bowl, combine flour, ground flax, sugar, baking powder, salt, cinnamon and nutmeg.
In a medium bowl, lightly beat together egg yolks, milk and butter. Add liquid ingredient to the dry, and stir until just combined. Shred apple, add to batter; stir until just combined. Fold in egg whites.
Preheat griddle or heavy fry pan to medium heat. Lightly grease pan or spray with nonstick vegetable spray. Using a 1/3 cup measure, pour batter onto pan. Cook pancakes until bubbles appear on surface, about 1 minute. Turn over and brown other side.
Makes 12 pancakes.

I took some time off from work to take care of my Grandma, and  to rest because I always feel "sick."  I know I feel this way because I am over weight, and my food choices aren't the greatest.  So, 6 months later I decided that it was time for me to go back to work.  I didn't want to eat too much before my first shift on my first day back, because I was afraid of how my body would react. But I had to eat something so I wouldn't be hungry.  So what did I eat?  A Carmello bar and a cup of chocolate infused coffee.  Next time I'll try a salad.

Dear Elizabeth, Congratulations on losing 80 pounds. That's fantastic and no easy feat. As for the last twenty, you're going to have to infuse some heavy-duty positive self-talk. Look in the mirror and re-commit to yourself and re-ignite your enthusiasm. It's important to give yourself what you want. Each and every morning when you wake up, take a moment to align yourself with your goals and remind yourself that you want to fully participate in life. Not 80% participation; but 100% participation and that losing those 20 pounds is both physically and psychically important. Imagine (visualize) how you will feel after losing those last 20 pounds! Learn from your missteps. Don't let them defeat you. And don't stuff it down! Either write about your experiences in your journal or write to OLofWL. She's listening. ~ OLofWL

Dear Susan, Ah, well, It's all in the taco. I'm sure your tacos are Our Lady approved! But my guess is that fast food tacos are not the best in terms of health, calorie content, etc.! If you've got a great taco recipe, please share it with us. I could go for a taco, too! Yum. ~ OLofWL
