Cloves are the unopened pink flower buds of the evergreen clove tree. The buds are harvested when pink and dried until they turn a reddish brown color.  Although their exterior is hard, their flesh contains an oily compound that is vital to their nutritional makeup and their flavor. Their taste is warm, sweet and fragrant; their aroma summery and fresh. And they are amazingly healthful.

Cloves contain large amounts of eugenol.  Eugenol is used in dentistry as an anesthetic and antibacterial agent. Cloves are also loaded with flavonoids and anti-oxidants, and they are also an excellent source of dietary fiber, vitamin C and omega-3 fatty acids as well as calcium and manganese.  It is also said that cloves are good for digestion, circulation and some even say that cloves are an aphrodisiac.  (That just about covers it.)

Chinese courtiers, dating back to 200 BC, used cloves to freshen their breath when addressing the emperor as not to offend him!  Around the 4th century, Arab traders brought cloves to Europe, although they didn’t catch on until the Middle Ages.  Their pungent flavor masked the taste of their poorly preserved foods.

Cloves are indigenous to the Moluccas, but they are also produced in Zanzibar, Eastern Africa, West Indies, Sri Lanka, Madagascar, India, Pemba and Brazil.

Be sure to store cloves in a cool, dry place.

Our Lady of Weight Loss’ favorite Quick-Serve-Clove-Tips:

    • Pierce an onion with whole cloves and add to soups!
    • For an Indian inspired quick sauté, add ground cloves and curry powder to onions, garlic and tofu.
    • On those spring days when it feels more like winter and you're in need a bit of comfort, try adding ground cloves and cinnamon to your hot apple cider. (Did you want to add a tad of rum? That's your call.

Righteous Recipe ~ Orange Glazed Ham

 

Ingredients: 

1/4 cup brown sugar
2 teaspoons ground mustard
2 teaspoons grated orange peel
4 tablespoons orange juice
whole cloves
3 pound boneless, precooked ham

Yes, there's sugar in the recipe, but one teaspoon of sugar is only 16 calories. That's one teaspoon, not one tablespoon! If you don't drink the gravy, you'll be all right.

Directions:
Combine brown sugar, mustard, orange peel and orange juice with a quick whisk.
Score top of ham.
Stud with whole cloves.

Bake in 350°F. oven 1 hour, baste the last 30 minutes with sugar mixture.
Let stand 15 minutes and slice.

Forgive me, for I have sinned.

I confess that I had lost 5 pounds by not eating between my dinner and bedtime.  Then I gradually began my pattern of eating something sweet again, just before I went to bed and gained my 5 pounds back.  In penitence I have been walking and stationary bike riding 60 minutes a day for the last 8 days, in 2 separate 30 minute sessions and gotten 4 pounds off.  I confess I still need to stop eating at bedtime for comfort.

Dear OLofWL, I read your article in First magazine and you truly are an inspiration to me!  I have lost 55 pounds, but unfortunately I've gained 20 back.  It was easy losing it the first time, but this time is so rough.  Your article reminded and reinforced to me that I need to keep busy doing other things...rather than eating!  I think of food 24 hours a day - 7 days a week!  It's an obsession or something, not sure why.  My toughest time is at night when I sit in front of the TV and watch Dr. Phil (I tape it during the day and watch it at night when I get home).  I'm going to start sewing, scrap booking, petting the cat, etc... to keep my hands busy (and my mind occupied) instead of eating! I hope I can lose this 20 pounds again! Thanks for the inspiration, Melanie - P.S. You look wonderful - keep it up!

Dear Melanie, Congratulate yourself - you only regained 20, not the entire 55, and you're taking control now. Consider it part of the process and learn from your missteps. Statistics show that those who weigh themselves regularly (before things get out of hand), keep track of their daily food intake (as in write it down) and exercise, have a much better chance at permanently removing weight. Pretty much no one does it the first time out. Great, great, great! that your sewing, scrapbooking, and petting the cat. Keep those hands busy. I'm sure there's a correlation.
