Is SHE nuts?

I thought nuts were high in calories and fat?

Yes, they are - BUT … Nuts and seeds are nutritious and are a good source of non-animal protein, fiber, B vitamins, selenium, zinc and Vitamin E.  They may reduce the risk of cancer, and they have anti-aging properties! They are infinitely better for you than highly processed, empty calorie snacks!

The fat in nuts is pretty high (50%), but it’s mostly monounsaturated fat – the good kind - that helps increase HDL levels in the blood.  Most nuts and seeds are naturally low in saturated and trans fatty acids – the two types of fats that are dangerous to the heart and arteries.

You might want to consider including nuts and seeds as part of your daily fat requirement, rather than the usual vegetable oils, margarines or animal fats like butter.

Nuts eaten in small amounts, might help to control your appetite. The fat and protein combo satiates for a longer period of time than carbohydrate snacks.  The stomach empties more slowly and the fiber content gives you a sense of fullness.

Now, don’t go completely nuts!  Remember, one tablespoon of nuts equals one fat serving. 

The Do’s and Don’ts of NUTS!

  • DO sprinkle a tablespoon of nuts or seeds on your salad.

  • DO add a tablespoon of nuts or seeds to your sandwich.  Nice ‘n crunchy.

  • DON’T eat nuts or seeds that are roasted in oil!  It’s double trouble!

  • DON’T buy nuts or seeds that look old or have mold on them. (Did I really have to tell you that?)

  • DO eat your nuts and seeds in a reasonably short amount of time, one month tops, lest they get rancid.

  • DO try walnut or pumpkin oil for a variety of taste.  Use them sparingly and do not heat them (lest oxidation will occur).



Righteous Recipe ~ Low-Fat Waldorf Salad - Love those nuts!

Ingredients:


• 4 apples, unpeeled, cored - chop into bite size pieces (about 3 cups)
• 1 tablespoon lemon juice
• 1/3 cup raisins (plumped*)
• 2/3 cup chopped celery
• 1/4 cup BLACK walnuts**
• 1/4 cup low-fat mayonnaise 
• 1 tablespoon sugar

*Plumped: Place raisins in a bowl and add enough warm tap water to cover them.  Allow them to sit for a few minutes, absorbing the water, as they happily and peacefully plump up. After they are sufficiently plumped, carefully (and with love) squeeze out excess water.

Directions:

Mix everything together in a medium sized bowl with the mayonnaise and sugar. You can serve now, but it's even better when you let it chill overnight. Something yummy, crunchy and chewy to look forward to.

Serves 6.  
Approximately 200 calories per serving (non-scientific calculation)

** Black walnuts are 94 calories per ounce vs. regular Walnuts at 296 calories per ounce.

Chewing the Fat - How you doin'? Write Our Lady.


I'm here at a resort on the coast, suffering away in the cyber cafe. I only splurged once-ridiculously so, ho ho ho. My husband is a presenter so we've a fab room with fruit basket, wine, blah blah--but in the middle of the basket was a box of 6 perfectly perfect chocolates. Here I've been so good for awhile and I inhaled those little puppies--then came to my senses and like a dummy saved one for my honey! He asked if there were only two and of course I ignored him. Gosh, was it worth every calorie and no-no sugar for this diabetic? Sheesh!

Dear OLofWL, Whoa’s me! I need to stop eating! I had a kidney transplant two months ago, and the drugs that I have to be on are causing me to gain weight faster than I can say whoa! My transplant was an immediate success, thanks to my donor daughter.  I feel great, and so, along with the blessing of a new kidney, the least I can do is TRY!!  I have (so far) gained twenty lbs...and I wasn't small to start with! My doctor assures me that I can fight the weight gain in spite of the drugs, so with that thought in mind I am going to get off my tush and get on with it instead of feeling so helpless.  I also love to paint and create. I will use those God given gifts in my fight against fat just like you did. I love your enthusiasm.
