FAT 101: The
good, the bad and the trans-fat.
I'm gonna' try and make this
easy.
All fats are made up of triglycerides.
Saturated Fat turns into cholesterol
in the body and clogs the arteries. It is found in animal
products: red meats, turkey, chicken, pork, eggs, whole milk,
and chocolate and some oils (such as coconut or palm kernel
oil). (Our Lady Rating: 4 fat blobs*)
Chicken fat is 100% fat and cholesterol and can clog
your arteries like no other fat before it. Chicken fat
is about the worst type of fat on the planet, although
lard is giving it a run for its money.

Polyunsaturated Fat may be healthier than saturated
fat, but too much of it has been linked to some cancers. Polyunsaturated
fats are high in most salad oils, such as safflower and corn
oil. Use them if you will, but don't over do it. (Our Lady
Rating: 3 fat blobs*)
Monounsaturated Fat is the healthiest type of fat.
In moderate amounts it may lower "bad" cholesterol
and raise "good" cholesterol. Canola and olive oil
are rich in monounsaturated fats. While monosaturated fat
is "good," you should still use it in moderation.

Hydrogenated Fat (a.k.a. Transfatty Acids) is oil
that has been processed. Crisco is hydrogenated fat. It can
clog the arteries. The body turns hydrogenated fats into cholesterol,
just like it does saturated fat. Avoid it! (Our Lady Rating:
5 fat blobs*)
Essential Fats are good for you and you should eat
a little every day. Omega-6 fatty acids are easy to get from
almost any vegetable oil, such as safflower or corn oil. Omega-3
fats do good things . They lower cholesterol levels and lower
blood pressure. Omega-3 fats are found only in fish and canola
and flaxseed oils. (Our Lady Rating: 1 fat blob*)

Warning: Just because Peanut Butter and Olive Oil
are in the 'good' column doesn't mean you should go hog wild
and eat them in unlimited amounts.
FICTION: Tofu and veggie burgers are
low in fat so I can eat twice as much!

no sugar, no white flour. The withdrawal is killing me....mood
swings, irritable, sad etc...I hear that the sugar cravings

Dear Sugar Free Debra, I did a bit of research,
as - I confess - I am not sugar-free. It is my understanding
that one must go off sugar slowly, moving from white sugar
to brown sugar. Also, remember to eat green vegetables and
be sure to eat three meals a day. Withdrawal from sugar may
feel like withdrawal from a drug. Both sugar and narcotics
elevate our beta-endorphin levels. When we stop using them,
our brain sends out signals for more. Yes, this can create
mood swings. And thanks for your kind words. Our Lady loves
