STOP! Don't throw those veggies
out with the bath water!
Did you know that the longer you cook vegetables, the more
they lose their vitamins and nutritional value? Researchers
recently tested four methods of cooking broccoli. Their findings
were published in the Journal of the Science of Food and Agriculture.
- Microwaving vegetables killed 74 to 97% of the
antioxidant compounds that reduce the risk of lung cancer
and heart disease.
- Boiling eradicated 66% of their flavonoids.
- Blanching (briefly submerging vegetables in boiling
water) before freezing caused them to lose up to 1/3 of
their vitamin C content and more than half of their folic
acid.
- But STEAMING only caused a minimal loss of 10%
of antioxidants. Why? Because the vegetable isn't in direct
contact with water, so there's no direct leaching of antioxidants.
By the way, RAW vegetables may carry food-borne illnesses
such as salmonella and hepatitis A!
(I'll risk it. I'm still eating my carrots raw.)

Dear OLofWL, My favorite 2 point snack is to
take Cascade Fresh no-fat orange yogurt and freeze it. When
it is time to eat, I take the top and plastic off the top
and put it in the microwave for 30-50 seconds. It is ready
to eat when it is like ice cream. Stir and enjoy. The cold
makes you eat it slower and it is even better in July. ~
